Pan Seared Salmon with Smoked Tomato Concasser

Ingredients
  • 4 6 - 8 ounce salmon filets
  • salt and pepper to taste
  • 4 Roma tomatoes - smoked, seeded and diced (tomatoes are easily smoked using the Cameron Stove top smoker)
  • 1 shallot minced
  • 3 sprigs thyme
  • 2 cloves minced garlic
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
Directions
  1. Season and sear salmon on presentation side then flip and finish in the oven at 425 degrees for 5 to 8 minutes, depending on size of filets.
  2. Combine tomatoes, shallots, thyme, garlic, olive oil and balsamic vinegar, season with salt and pepper to taste.
  3. Serve over Salmon.
