Foolproof Grilled Pork Tenderloin
With the summer grilling season upon us, this easy recipe will draw raves from family and friends!
The fig preserves are available at Someone's In The Kitchen.
Ingredients
- 2 pork tenderloins (about 2 lbs.) brined as described below
- Soy Marinade - (¼ c.soy, ¼ c.sherry, 1 clove pressed garlic, 1 tsp. grated ginger, ½ tsp. black pepper)
- Fig Preserve Glaze - (½ c. fig preserves, ¼ c. rice vinegar, ½ tsp red pepper flakes,
1 T Soy sauce, ½ tsp salt)
Directions
- Remove any fat or silverskin from the tenderloins and soak in a
brine of 2 qt. water + ¼ c kosher salt + ¼ c sugar up to 2 hours.
- Remove from brine, pat dry, and marinate in soy mixture for up
to 2 hrs. Before grilling, baste pork with fig mixture.
- Heat gas grill until fully heated, place pork on hot grate, close cover,
and grill for 7 minutes. Turn pork, close cover and grill for 6
more mintes. Without opening the lid, turn off the heat and con-
tinue cooking for another 5 minutes. At this point, an instant
read thermometer should read 150 degrees - if not, let the residual
heat continue cooking the pork until 150 is reached. Remove from
grill and let pork rest covered for 5-10 minutes - baste with any
remaining fig mixture, slice on the diagonal, and serve. This
7-6-5 method is foolproof - throw on some extra tenderloins for
awesome leftovers!!
