Chili Colorado Con Puerco

Ingredients
  • 5 tablespoons crushed red pepper
  • 1 ½ tablespoon vegetable oil
  • 1 cup chopped onions
  • 3 minced garlic cloves
  • 8 ounces pork tenderloin cubed
  • Salt and pepper
  • 1 cup crushed tomatoes
  • 1 teaspoon Mexican oregano
Directions
  1. Soak crushed red pepper in 2 cups of hot water for 20 minutes.
  2. Puree in blender or food processor.
  3. Heat oil in large sauté pan over medium high heat.
  4. Sauté onion until translucent.
  5. Add garlic, stir for one minute.
  6. Add pork to pan, season with salt and pepper.
  7. Stir until cooked through, about 5 minutes.
  8. Add crushed red pepper puree, tomatoes and oregano and mix well.
  9. Reduce heat to low and simmer for 20 minutes, or until pork is very tender.
  10. Add water as needed to maintain sauce like consistency.
