Maids of Honor

Ingredients
  • 4 oz butter
  • ½ cup sugar
  • 2 eggs, beaten
  • 5 oz ground almond or almond paste
  • ½ cup flour
  • ¼ teaspoon baking powder
  • 1 teaspoon almond flavoring
  • raspberry jam
Directions
  1. Combine butter and sugar in food processor and pulse.
  2. Add 2 eggs, pulse.
  3. Add almond paste, pulse.
  4. Add almond flavoring while pulsing.
  5. Add flour and baking powder and pulse until very smooth.
  6. Roll tart pastry dough flat and press into small tart pans.
  7. In each unbaked small tart put scant ½ teaspoon. raspberry jam.
  8. On top of jam put 1 teaspoon of almond mixture.
  9. Bake at 375 until light brown, 15 to 20 minutes.
