Stuffed French Toast

Ingredients
  • 4 ounces cream cheese, softened
  • ½ cup apricot preserves
  • loaf of day old Italian or French bread
  • 3 eggs
  • ½ cup buttermilk
  • 2 tablespoons sugar
  • 2 teaspoons vanilla
  • ¼ teaspoon salt
  • 2 cups coarsely crushed corn flakes
  • 2 tablespoon butter
  • 2 tablespoons vegetable oil
Directions
  1. Combine the cream cheese and apricot preserves.
  2. Slice bread about 3/8 inches thick.
  3. Make sandwiches using the cream cheese mixture.
  4. Mix together the eggs, buttermilk, sugar, vanilla and salt.
  5. Dip the sandwiches into the egg mixture and then into the crushed corn flakes.
  6. Combine butter and oil in skillet and heat to medium so that it sizzles when you put in a drop of the egg mixture.
  7. Fry sandwiches until golden on both sides.
  8. Drain on cookie sheet lined with paper towels.
  9. Serve immediately or keep in warm oven until ready to serve.
  10. Makes about 7-8 sandwiches.
